Pheasant Stuffed Red Pepper Recipe Jan 2008

Many local Pheasant Forever members are lucky enough to have a few birds in the freeze so now is a good time to plan your wild game dinner. If you need a few more birds, pheasant season lasts until February 2, 2008 in our area. Visit for more information on pheasants.

Debone the breast of two pheasants. Sprinkle a small amount of seasoning on the meat - poultry seasoning, cayenne pepper or your favorite seasoning. Roll one piece of the breast meat up with a slice of ham and a slice of provolone cheese. Stuff the roll into a cleaned red pepper. Put four peppers in a casserole dish along with a can of chicken broth, diced onion and two chopped carrots. Bake at 375F for 1 hour.
